Lazy Microwave Cheese Sandwich + How to Utilize Your Sister



Ok. Two things you need to know before reading this post: one that this is really a lazy sandwich, tastes amazing nevertheless, and two that I absolutely couldn't bear looking at my sister snuggled up in the bed. So when she asked for a sandwich, I got her to do this. Plus it's always good to have her do my bidding like a minion. Yes, she is my very own, home bred, cannot leave ever, personal minion.

Now stay put as she tells you how to make this cheesy sandwich in just about 3 minutes, well that's if your elder sibling isn't making you pose to take pictures of just about everything you are doing.


Fist of all, you need cheese. Of course, this is a cheesy sandwich after all. I had slices of cheddar cheese. You can use grated cheese. Lot's of it. I used only one slice, but later thought two slices would have been better. So on the cheese front, suit yourself.



Then you will need some caramalised onions to add that subtle sweetness to your sandwich. I absolutely adore caramalised onions in sandwiches and burgers. They do enhance the flavors, don't they? I would love to know your favorite way of using caramalised onions.



And for the fresh crunch we have strips of red and yellow bell peppers. A lazier version of this sandwich is the one I remember from my days in Delhi. Some fresh icebergs, these peppers and a dollop of mayonnaise between two slices of bread, and you are done. But why did my roommate and I do this? Oh yes! We did not have a microwave.



Then we have got 2 slices of bread. Fresh and tender. I hope I don't come across like a criminal for using regular white bread in this age of health promoting wheat and oats and multi grain bread. I am not against them anyway. The sweetness of white bread sits perfectly in a sandwich and more importantly, this is what I had in hand, or rather my sister had in hand.



After you are done feeding the enormous hunger of your crazy sibling, I in this case, to trouble you, assemble all ingredients on your work platform.



To assemble the sandwich, place the cheese slice on a slice of bread and top it with a dense layer of caramalised onions. Then place strips of bell peppers in a regular fashion. This girl in the picture decided to go for haphazard vertical and horizontal arrangement first but was instructed not to so as it would later create a mess while eating. Then place the other slice of bread on top.

If you are using grated cheese, use it as a topping over the layer of peppers.



Pop your sandwich into the microwave for 30 seconds to warm it and melt the cheese. It helps if you invert the sandwich so the cheese slice is the topmost layer as opposed to being at the bottom while assembling the sandwich. That way the melted cheese makes its way into the nooks and crannies of the other layers.

Bring it back into your board and slice it into two pieces.





Enjoy the sandwich warm and let your sister take an awkward picture of you eating it.

Peach and Fig Sandwich with Lemon Glaze

Every time I hear 'peach', I hear Ross saying, "I bruise like peach." While I was working on this sandwich I couldn't resist, found this particular episode on Friends and watched it. Hilarious!

Anyway, I myself am not a peach-fan and I simply ignored them when I saw them sitting in the fruit bowl at home. But as the day progressed, those peaches would just stare at me every time I passed by as if asking me, "What have we done to deserve this cold attitude?'' My heart melted! I set about thinking a recipe that would be agreeable to both them and me. The outcome was this lovely peach and fig sandwich. The next time you get peaches, spare at least 1 to try out this recipe.


Peach and Fig Sandwich with Lemon Glaze

I have used dried figs in this recipe. Since I have never worked with fresh figs, I am not sure how they would taste in this recipe. Please let me know if you happen to use fresh figs for this sandwich.

Ingredients:

Peaches- 3 nos
Sandwich bread slices- 4
Dried figs- 3-4 nos
Grated cheese- 4 tbsp
Granulated sugar- 2 tbsp
Confectioner's sugar- 2 tbsp
Lemon juice- 1 tbsp

Recipe:

Peel and chop peaches. Add granulated sugar, mix and set aside for 15-20 minutes. Sugar will melt in juice released by peaches.

In a pan, add these sugary peaches and let the mixture thicken on medium flame. Add a pinch of cornflour if needed. Turn off heat when no liquid remains.

Chop figs.

Take bread slices.

Spread a layer of peach. Then add a few pieces of figs. Top with grated cheese.

Place another slice of bread on top.

Grill.

To prepare lemon glaze, in a small bowl mix together confectioner's sugar and lemon juice.

Drizzle on sandwiches.

Pomegranate Sandwich

Pomegranate in a sandwich. Oh wow!
That's what I said to myself when I saw pomegranate and bread in my fridge. The best part about pomegranate is that when bitten into, the seeds flood your mouth with their juices and to me it is a much loved sensation.
If I ever got dentures, it would be so I could have pomegranates!


Pomegranate Sandwich


In this sandwich spread, I have added cucumber to add extra crunch and to just even out the flavors.

Ingredients: 

This recipe makes 2 sandwiches.

Sandwich bread slices- 4
Pomegranate seeds- 4-5 tbsp
Cucumber, diced- 2 tbsp
Mayonnaise- 2-3 tbsp
Processed cheese, grated- 2 tbsp
Salt and pepper for seasoning

Procedure:

In a small bowl, mix together pomegranate seeds, cucumber, mayonnaise, cheese and season with salt and pepper.

Your sandwich spread is ready.

Divide and apply the spread on two bread slices. Place other two slices on top of each.

Remove crust and cut diagonally ( or in any way you like).

Enjoy with evening tea.

Sweet Corn Sandwich with Creamy Cucumber Spread


It so happened that last week one of my mom's friends sent over about 15 corn cobs from her farm. I had farm fresh sweet corn at my disposal (too much of it) and the wheels in my mind started churning. And they kept churning until last evening when I felt like having a sandwich and lo! then it clicked, a sweet corn sandwich! How elegant!

Ingredients:

This recipe makes 4 sandwiches.

Sandwich bread- 8 slices
Sweet corn, boiled- 6-8 tbsp
Onion, finely chopped- 1 big
Green chilly, finely chopped- 1
Milk- 5-6 tbsp
Cornflour- 1 tbsp
Butter- 1 tbsp
Salt to taste

For cucumber spread

Cashews, soaked in milk for 2-4 hours- 15-20 nos
Cucumber, finely diced- 1/4 cup
Salt to taste
Pepper for seasoning

Recipe:

Cucumber spread
Grind soaked cashews with little milk, salt and pepper to a smooth paste.
Add diced cucumber and fold.
Refrigerate for 2-4 hours.



Sandwich
Heat butter in a pan. When it starts frothing, add onions. Saute till they turn translucent.


Add corn, chopped chillies and salt. Mix well.


Dissolve cornflour in milk. Add to sweet corn. Keep the flame low.


Cook on low flame with continuous stirring till no milk remains.



The mixture will be sticky in texture.



Take 2 bread slices. Spread corn mix on one slice and cucumber spread on the other. Be generous!


Place the slice with cucumber spread on top of the other slice.

Grill your sandwich and indulge!!

Veggie Tapioca Twist Burger

I love burgers! Who doesn't?
What makes a burger stand out is the patty, a juicy, delectable,  sumptuous patty. In this recipe, I have given the very Indian Tapioca pearls (saboodana) an Italian twist. You will love the fusion!

Veggie Tapioca Twist Burger


Ingredients: ( For 2 servings)

Burger buns- 2 nos
Tomato slices- 4
Cucumber slices- 4-6
Shredded cabbage- 1/4 cup
Mayonnaise- 4 tbsp
Grated cheese- 2 tbsp
Lemon juice- 1 tbsp
Olive Oil- 1 tsp
Pepper for seasoning
Oil for shallow frying

For patty:
Potatoes,  boiled and mashed- 2, medium
Tapioca pearls,  soaked- 2 tbsp
Garlic, roasted and chopped- 3 cloves
Butter- 1 tsp
Dried Oregano- 1 tsp
Dried Basil-1 tsp
Mustard Sauce- 1 tsp
Chilly flakes- 1/4 tsp
Salt and pepper to taste

Recipe:

Combine shredded cabbage,  mayonnaise,  olive oil,  lemon juice and pepper in a bowl and mix well.

Combine all ingredients for patty in a bowl and mix well.

Divide the mix in two parts and make about 1/2 inch thick patties.

Shallow fry each patty on both sides till they turn golden brown.

Now to the fun part! Assemble the burgers!

Place a slice of tomato on the bun. 

Top with some mayo mix.

Place cucumber slices.

Place a patty.

Top with grated cheese and some more mayo mix ( yum!).

Finally place another tomato slice and then top half of the bun.

Warm in microwave for a minute.

Just gorge!!

Veggie Grilled French Fries Sandwich

Whenever my sister and I meet at home, we have something we call a Sandwich Tradition. We devote one evening to indulge in sandwiches, even the greasiest ones, without any guilt! Today was one of such evenings and and I am sharing the recipe of the sandwich we made.
Hope you enjoy it like we did.

Veggie Grilled French Fries Sandwich

Ingredients:
2 sandwich bread slices
1/2 carrot grated
1/4 capsicum thinly sliced
1/4 cup shredded cabbage 
2 medium onions caramalized
2 tbsp grated cheese
Few french fries
1/2 tsp tomato ketchup
Salt and pepper for seasoning
Butter

Recipe:
Prepare the filling by mixing grated carrot, capsicum, cabbage, cheese. Season with salt and pepper.

To prepare the sandwich, take a slice of bread and spread a layer of caramalized onions. 

Then spread a layer of the filling.

Place the french fries on top of the filling layer. 

Top the layer of fries with ketchup (or any other sauce of your liking).

Place the second slice of bread and grill on both sides using butter.

Enjoy your sandwich!
